Nutrition Fundamentals

Nutrition Concepts and Medical Nutrition Therapy is comprehensive coursework that covers basic nutrition, body systems, disease, special diets and CMS regulations. This knowledge is used to learn nutrition screening and assessment, calculating and interpreting nutrition data, developing and documenting care plans, and evaluating effectiveness. As part of the program requirements, field experience in the workplace must be supervised by a Registered Dietitian (RD) and documented by the student to demonstrate competencies. Book is required and must be purchased online from the Association of Nutrition and Foodservice Professionals (ANFP) before the start of class.
